Alan Orreal

Culinary Director – Food & Beverage

Shanghai Disney Resort, China

“Being Part of The Chefs and The Teamaker programme for me was a very special experience. Sri Lanka burns deep in my heart as a land that I adore and long to return to.

This tour reminded me once again of the warm all-embracing hospitality of Sri Lankans and their light hearted joy in life. Revisiting many places that I enjoyed while living in this magnificently beautiful country and sharing this experience with world-class chefs from all corners of the planet was nothing short of amazing. Usually whenever I am travelling with other Chefs it’s because we are competing or judging in a culinary competition setting with little or no time to spend together. On the Chefs and the Teamaker Tour we collaborated and shared ideas around Tea in Gastronomy and Tea in general. We worked together and inspired one another to use the Tea to bring out the best of both in our dishes. Seeing first hand and tasting the full range of Teas from differing elevations gave me a far greater insight into Tea and the individual characteristics of this marvellous herb. Moreover I was thoroughly impressed by the work of the MJF Foundation and Dilmah’s commitment to the wellbeing of their workers and the neediest of the public in general. Making business a matter of human service is a most noble act and resonates strongly with me and clearly sets Dilmah above and beyond the rest. Dilmah to me means Quality, Ethics and Inspiration!”

The Director of Culinary at Shanghai Disney Resort where he is spearheading the project in terms of dining options across the mega resort (due to open in late 2015) Alan Orreal is the very essence of borderless and dynamic modern-day chef. He is the Vice-Chairman of the World Association of Chefs Societies committee for the Global Development of Young Chefs and a WACS-approved judge in addition to being a guest lecturer at food collages across Asia and a TV host and judge of a television reality show that uplifts the lives of underprivileged and homeless teens through education and cooking.

Born in Australia, Chef Alan Orreal has lived and worked in Asia for much of his 25 years in the culinary industry, which included stints in a variety of establishments ranging from five-star hotels, airline catering, and fine dining restaurants in Singapore, Taiwan, Sri Lanka and Australia. His style of cuisine which can only be described as modern global cuisine is a reflection his dynamic and borderless outlook to his profession.

Chef Alan’s influences are driven very much from the great chefs that he has trained under, including Cheong Liew, Tony Bilson, Otto Weibel and Peter Knipp. Individually, Alan has carried away coveted trophies and medals from numerous culinary events and is without doubt one of the most celebrated culinary professionals in the world today.
